Ingredients for the Clementine Syrup (yields 750ml)

300ml fresh clementine juice
200ml newly squeezed lemon juice
500g granulated sugar

For the Drink (makes 850ml, serving 10)

400ml premium vodka
100ml dry gin
150ml peach-flavored liqueur
200ml citrus syrup (as made above)
Whole cranberries, for garnish
Mandarin essential oil, for finishing

Directions

To prepare the Citrus Syrup: Combine all the ingredients into a pan, bring to a simmer, mixing until the sugar dissolves. Then, remove from the burner allowing it to cool down fully. Pour into a sterilised bottle, seal keeping it in the refrigerator, it can be stored for about four weeks.

Preparing the Batch Mix: Combine all the liquid ingredients into a big jug, leave to sit for an hour, then pass it through preferably using cheesecloth, so it's fully clarified.

To serve: Measure 85ml from the batch mix into a stirring glass packed with ice, gently stirring gently for one minute until cold. Filter to a chilled martini glass or similar, top with the cranberries and complete it with a quick spritz of the essential oil above the glass.
